Dear Reader

Here is a delicious simple chicken breyani recipe that I am sharing with you. I amalgamated all the experts in my life (mum and aunts) and created a recipe that works in my home.  Such comfort food for all...

Awesome Chicken Biryani RecipeTrish Moodley

You will need:    
Delicious chicken breyani


700g whole chicken cut into pieces
Fine salt – 1 tablespoon
1 tablespoon ginger garlic paste
2 cups double thick greek yoghurt
1 tablespoon whole cumin/jheera seeds and 1 tablespoon whole coriander/dhania seeds – toast gently on a dry frying pan on stovetop – cool and then grind with a mini grinder (electric) until it is in a powder form
5 cinnamon sticks (medium)
1 flower seed (aniseed)
4 green cardamom pods (elachi)
¼ teaspoon turmeric
1 ½ tablespoon curry powder – I use leaf masala -  (whatever you normally use or purchase a curry powder at your local store)
1 tablespoon gharum masala (great for breyani – this is in powder form)
A handful of fresh mint and ½ quantity of fresh coriander – wash and grind with a little water
Mix all into the chicken and place in a sealed container overnight

Next day:
Take out your chicken marinade and keep at room temperature for 30 minutes.
Parboil 1 ½ cups rice with 1 tablespoon coarse salt, 1 bay leaf, 1 cinnamon stick, 1 flower seed/aniseed – boil for 25 minutes on high heat adding water all the time. Strain and set aside.
1/3 cup lentils (brown) for 20 minutes – strain and set aside
Sliced one small onion into thin slices. Fry in vegetable oil until brown and crispy – drain and add to chicken marinade.
In a large pot – add 2 tablespoon vegetable oil, 2 tablespoons butter, 2 tablespoon Rama margarine (any margarine safe for cooking)

Add chicken marinade, then add rice, sprinkle a teaspoon of egg yellow colouring on top of the rice, then add the lentils.
Close the pot tightly and on simmer - cook for an hour until it gently cooks and fuses the flavours. Do not overcook it - it will dry out. Add few drops of water if this occurs at the end.


Roasted potatoes:

Cut 3 whole potatoes suitable for mashing - into quarters. 
Boil with water and coarse salt – 1 teaspoon.
Add  ¼ teaspoon turmeric, few fresh celery cubes, 1 teaspoon coriander/dhania powder, 1 teaspoon cumin/jheera powder
Strain when it’s cooked partially.
In a frying pan add 4 tablespoon vegetable oil, 2 tablespoon butter and 2 tablespoon margarine
Fry until crisp and golden brown – serve on top of breyani

My eating plan:
Healthy eating and ready to party!

Today I am sharing my daily eating plan that has helped me maintain my energy and a happy weight. I do eat what I like if I am craving it but try to eat as clean as possible most of the time.

This meal plan was put together by loads of research that I did from my favourite celebrities to diet books that I read - I created this from a combination of sources for a lifestyle that fits with mine and that yes - works for me..

Read through it and take what you can to fit with your life - ultimately it needs to be sustainable..

My Healthy Eating Plan:


Morning:
Drink:   1 cup boiled cooled water, 1 teaspoon of raw honey, 1 teaspoon freshly squeezed lemon, grated ginger – ½ teaspoon.
1 cup cold bottled water, 2 TBSP Apple cider vinegar  (Braggs) and cinnamon powder.

Breakfast: eggs, spinach, mushrooms, 500ml water
OR (on the go Smoothie) Smoothie: water, spinach, kale, blueberries, pineapple, grapefruit, chia seeds, pumpkin seeds, apple, protein powder – love this!! Add fresh mint for a better taste!
1 CLA capsule, 1 flaxseed, 1 chromium, 1 magnesium
Snack: green tea, dark chocolate almonds
Midday lunch: green smoothie (1 CLA), 500ml water  OR chicken breast, veg and fruit (if breakfast was light)
By 4pm – ACV and cinnamon

Light supper: fish and veg

Late night before bed: Hot water (cooled), 1 TBSP honey, fresh ginger, cinnamon, lemon

SNACKS: watermelon, pear, papaya, green tea (decaffeinated)

Ps. I have one smoothie a day and lunch – then a light dinner. I try to eat heavier carbs (potatoes) at lunch and avoid it at supper time. Nothing after 7pm. If I am hungry I eat double thick Greek yoghurt with drizzled with honey and cinnamon with blueberries.

Add whatever makes your body feel good and energized!

Today I have a great family activity to share...we took the girls for indoor Rock Climbing and it ROCKED!!! The beauty of the activity was that every one of us had to get involved..usually I sit out and read but today I was in on the action...

A lovely idea to get out and about! Look out for one nearby - your kids will love it and watching you try something with them too! I was teased by my girls about how low I was but it was all worth it!

Today I will be sharing my moment of sinful kitchen pleasures...yummy chocolate cupcakes!!!

I use the Nestle cocoa recipe which I have used for the past 20 years!!! It is the chocolate cake recipe that works brilliantly for cupcakes as well. My girls get to frost them and add their sprinkles of fun! See recipe in my recipe page above.
